Kapia Pepper — Romania's Favourite Sweet Pepper, Now Available BIO and Grown in Spain

The Kapia pepper is the quintessential Romanian sweet pepper — recognisable by its elongated shape, deep red colour, thick flesh, and intensely sweet flavour that intensifies dramatically when roasted. Unlike thin-walled bell peppers that collapse when cooked, Kapia's thick walls hold their structure and develop a rich, concentrated sweetness when exposed to heat. Roasted and peeled Kapia is the essential ingredient in traditional Romanian salads (salată de ardei copți), and its thick flesh makes it equally excellent raw — sweet, crunchy, and full of flavour with none of the bitterness that thin-walled peppers can carry. Rich in Vitamin C (one pepper provides approximately 150-200% of daily needs), Vitamin A, Vitamin B6, and antioxidant carotenoids including capsanthin and capsorubin — the pigments responsible for that deep red colour.

  • How to roast Kapia peppers the traditional Romanian way

Place whole peppers directly on a gas flame, turning with tongs every 1-2 minutes until the skin is completely black and charred all over — this takes 8-12 minutes. Transfer immediately to a sealed plastic bag or covered bowl for 10-15 minutes: the steam loosens the skin completely. Peel under running water, remove seeds, and dress with olive oil, crushed garlic, and salt. The smoky, concentrated sweetness is incomparable.

  • Other ways to use Kapia peppers

Raw: slice into strips for dipping with hummus, tzatziki, or aioli. Dice into salads, scrambled eggs, or mixed into rice. Stuffed: their size and structure makes them excellent for stuffing with rice and meat mixtures. Marinated: roast, peel, and preserve in olive oil with garlic and herbs — keeps 1-2 weeks in the fridge. In ajvar: the essential ingredient in the classic Balkan pepper relish

  • How to store Kapia peppers

Raw: fridge crisper drawer, up to 1-2 weeks. Don't wash before storing. Roasted and peeled: airtight container in fridge, up to 5 days. Cover with a little olive oil to prevent drying. Freeze roasted peppers: lay flat in a bag once cooled, freeze up to 3 months — excellent for cooking directly from frozen in sauces and stews.
