Higo Chumbo — The Cactus Fruit That Carries Every Natural Betalain Pigment
Higo chumbo is the fruit of the prickly pear cactus (Opuntia ficus-indica), and it holds a rare distinction: research has identified it as the only fruit containing all 24 naturally occurring betalain pigments — the same antioxidant family that gives beetroot its colour, but spread here across shades of yellow, orange, and deep magenta depending on the fruit. The flesh itself is what surprises first-timers: soft, juicy, and sweet, with a flavour often compared to a cross between watermelon and pear, studded throughout with small, edible, crunchy seeds — texture-wise, closer to a kiwi than anything in the pear family despite the name. Because the fruit doesn't keep ripening once it's off the plant, it's picked and sold at the colour and sweetness it will always have; buying it firm and waiting won't add sugar, only soften it. The skin is covered in nearly invisible spines called glochids, so it's handled with gloves or tongs, never bare hands, right up until it's peeled — after that, only the sweet part remains.

Chill it well, then slice the peeled flesh into rounds or cubes and eat it straight, spoon it right out of the halved skin, or blend it into juice or smoothies — strain out the seeds first if you want a smooth drink.
A genuinely rare source of all 24 known betalain pigments, plus a solid dose of vitamin C, dietary fiber, and potassium — all in a fruit that runs under 50 calories per 100g.
