The Lemon You Can Actually Use Whole — Peel, Zest, Juice, Everything Safely
Most supermarket lemons are coated in shellac, carnauba, or petroleum-based wax and treated after harvest with imazalil and thiabendazole — synthetic fungicides that penetrate the peel. None of this appears on the label, and it's fine if you only squeeze the juice. But if you zest, slice into drinks, or use the peel in cooking, conventional lemons are not the right choice. Our BIO lemons are unwaxed and grown without synthetic pesticides or post-harvest treatments — making the whole fruit genuinely food-safe. The difference in aroma is immediate: the peel of a real BIO lemon releases an intense, floral, almost herbal citrus oil that waxed lemons cannot match. One lemon provides around 35-45% of your daily Vitamin C needs, while the peel contains d-limonene — a natural compound in lemon oil studied for antioxidant and anti-inflammatory properties. Available in 2kg and 4kg boxes from our Andalusian growers in Spain.

Why BIO lemons are different — what's actually on a conventional lemon
Conventional lemons are routinely treated post-harvest with imazalil and thiabendazole (synthetic fungicides that penetrate the peel), then coated in wax to extend shelf life. None of this is labelled. BIO lemons skip all of it — no fungicide treatments, no wax. The peel is genuinely food-safe, which makes all the difference the moment you pick up a grater.

How to get maximum aroma from BIO lemon zest
Wash under cold water and dry well. Use a microplane or fine grater — zest only the bright yellow layer, not the white pith below (which is bitter). Zest directly over your dish to capture the essential oils. Leftover zest: freeze in a small airtight bag — keeps up to 3 months without losing aroma.

How to store BIO lemons
BIO lemons dry out faster than waxed ones — store in the fridge crisper drawer, up to 3-4 weeks. At room temperature: 1 week max. Cut lemons: cut-side down on a plate or wrapped in film, fridge, use within 3 days. Freeze juice in ice cube trays — one cube ≈ 30ml (one lemon's worth).
Zest directly over pasta, cakes, dressings, and marinades. Slice thin for water infusions, cocktails, and preserving. The peel is the real prize — use it freely, knowing it's safe.
~35-45% daily Vitamin C per lemon. Peel contains d-limonene — studied for antioxidant properties. Supports iron absorption and kidney health. BIO — peel is safe to eat whole.
