Kensington — The Mango Australia Can't Get Enough Of

Also known as "Bowen" or simply "KP," Kensington is Australia's most planted commercial mango by a wide margin, and once you taste it, the appeal is obvious: a genuinely distinctive flavour that's sweet and tangy with real floral character and a faint hint of spice, unlike the milder Florida-bred varieties most of the world grows instead. The skin starts green and ripens to golden yellow with a bright pink-red blush spreading across the top. Inside, the yellow flesh carries a moderate amount of fiber — noticeable but not overwhelming — and softens from firm to tender and juicy as it ripens. One practical note: the seed sits more tightly against the flesh than in free-stone varieties like Kent, so don't expect it to separate as cleanly when you cut around it. Ripeness comes down to a gentle squeeze, the same test that works on nearly every mango.

  • How to tell when Kensington is ripe

Look for skin shifting from green to golden yellow with a pink-red blush. Confirm with a gentle squeeze — ripe gives slightly under light pressure.

  • How to cut & use Kensington Mango

The seed clings more tightly than in free-stone varieties, so cut slightly wider around it. Slice, dice, or scoop the tender flesh once ripe.

  • How to store Kensington Mango

Unripe: room temperature, out of direct sun, 3-5 days to ripen. Ripe: refrigerate, use within 3-4 days. Cut fruit: airtight container, use within 2 days.
