Maracuya Amarilla — Louder, Bigger, and Not Afraid of It

If regular passion fruit feels a little tame, Maracuya Amarilla is the answer — the yellow variety, noticeably larger than its purple relative, with a punchier, more acidic flavour that Colombians and Brazilians reach for specifically because it "works harder" in juices, cocktails, and sauces. The rind is smooth, bright yellow, and slightly waxy; ripeness comes down to weight and a little give rather than colour change, since the skin often stays smooth even when the fruit is ready. A heavier fruit for its size means more juice inside, and the flesh should yield slightly to a gentle squeeze. Crack it open and you'll find glistening orange-gold pulp packed with crunchy black seeds, both entirely edible — the first taste lands sweet and tropical, and then the tartness arrives in full force, which is exactly the point.

  • How to tell when it's ripe

The skin often stays smooth, so don't wait for wrinkling. Pick it up: heavier for its size means juicier, and the flesh should give slightly to a gentle squeeze.

  • How to cut & use Maracuya Amarilla

Halve it and scoop the pulp and seeds directly with a spoon. To use as juice, blend and strain through a sieve to remove the seeds.

  • How to store Maracuya Amarilla

Room temperature for up to 3 days, or refrigerate for up to a week. Scooped pulp: freeze in an airtight container for up to 3 months.
