Passion fruit is one of the most misunderstood fruits when it comes to judging ripeness — and the misunderstanding costs most buyers the best flavour. A smooth, perfectly round, unblemished purple passion fruit is actually unripe. The wrinkled, slightly collapsed, indented skin is the sign of peak ripeness — the exterior skin has lost moisture and shrunk around the intensely flavoured, aromatic pulp inside. The pulp is golden-yellow, surrounding crunchy edible black seeds, with a flavour that's simultaneously intensely sweet and bracingly tart — floral, tropical, and impossible to replicate artificially. This concentration of flavour makes passion fruit one of the most versatile recipe ingredients available: a few tablespoons transform a dressing, a cake, or a cocktail completely.
