Pinkerton — The Avocado With Almost No Stone and More Creamy Flesh Per Fruit Than Any Other Variety

Pinkerton is the avocado that surprises even experienced avocado buyers the first time they cut into it. Its elongated, pear shape and pebbly green skin (which stays green when ripe — like Bacon, Fuerte, and Reed) conceal a disproportionately small stone and a very thick layer of rich, smooth, creamy flesh. This exceptionally low stone-to-flesh ratio makes it one of the best value avocados per kilo: you're paying for avocado, not seed. The flavour is rich and nutty — closer to Hass than to the lighter Bacon or Fuerte varieties — with a dense, satisfying texture that holds up well in any preparation. Pinkerton also has a slightly longer shelf life than Hass once ripe, making it a practical choice for households that don't eat avocados immediately. Our Pinkerton is grown in Andalusia, arriving firm and ready within 2-3 days.

  • How to tell when Pinkerton is ripe — it stays green

Pinkerton stays green when ripe — like Bacon, Fuerte, and Reed. Colour is not a useful guide here. Use touch: press gently near the stem end. A ripe Pinkerton gives slightly under light pressure without feeling mushy. Also try the stem test: remove the small nub at the top — yellow-green underneath means perfect ripeness.

  • How to cut Pinkerton avocado

Cut lengthwise around the (small) stone, twist halves apart — the stone comes out easily with a spoon due to its small size. Peel or scoop: Pinkerton's pebbly skin peels away cleanly in large sections. The generous flesh layer means you get large, clean pieces — ideal for slicing, dicing, or mashing. Add lemon juice to exposed flesh immediately.

  • How to store Pinkerton avocado

Unripe: room temperature. To speed ripening: paper bag with a banana overnight. Ripe: fridge, up to 5 days — slightly longer keeper than Hass. Cut: squeeze lemon juice on exposed flesh, wrap tightly or press film onto the surface, fridge. Use within 24-36 hours. The slightly thicker skin offers marginally better protection against oxidation than Fuerte or Bacon.

How to enjoy Pinkerton Avocado

Use anywhere you'd use Hass — the flavour is similar but the flesh-to-stone ratio is dramatically better. Exceptional for guacamole, toast, and salads. The thick flesh slices cleanly and holds shape well.
