Pitahaya Amarilla — Small Fruit, Big Reputation
In the Andean valleys of South America, where this variety originates, growers sometimes call it the "champagne" of dragon fruit — a nod to its status as the most prized and expensive of all the pitayas. It's noticeably smaller than its pink or red-skinned cousins, with skin covered in small, soft spines when young. As it ripens, those spines loosen and rub off easily, which doubles as a handy ripeness signal: a fruit that's mostly smooth is telling you it's ready to eat. Inside, the flesh is bright white with a firmer, denser texture than other dragon fruit varieties and a flavour widely considered the richest and most complex of the bunch. Because dragon fruit doesn't ripen much further once harvested, freshness is what to look for at this stage — bright, unblemished yellow skin and a gentle give under light pressure.

How to tell when it's ready
Watch the spines — a young fruit has more of them, and they loosen and rub off as it ripens. Combine with a gentle press: ripe gives slightly.
