Yellow Melon — Piel de Sapo's Smooth, Solid-Coloured Cousin
Also known as Canary melon, this one shares its oval shape and Spanish roots with Piel de Sapo, but the rind tells them apart at a glance: instead of green mottling, Yellow Melon ripens to a smooth, solid, almost waxy bright yellow all over, with none of the toad-skin texture of its cousin. Inside, the flesh is pale green to white, soft, and juicy, with a flavour that's sweet and slightly tangier than honeydew — sharper and a touch more refreshing rather than purely mellow. Because the rind is thinner and smoother than Piel de Sapo's, it releases a bit more fragrance as it ripens, though still not as strongly as a true cantaloupe or Galia. A ripe one feels heavy for its size and gives slightly at the blossom end.

How to tell it's ripe
Look for skin that's fully, solidly yellow with a slightly waxy feel. It should be heavy for its size and give slightly at the blossom end.

How to cut & use Yellow Melon
Halve lengthwise, scoop out the seeds, then slice into wedges or cube it. Its soft flesh also blends smoothly for chilled soups or smoothies.

How to store Yellow Melon
Whole: room temperature for a few days, or refrigerate. Cut fruit: airtight container, use within 3-4 days — its thinner skin means it doesn't keep quite as long as Piel de Sapo.
Slice into wedges and eat plain, or pair with lime juice to bring out its slight tang — a refreshing choice on a hot day.
A good source of vitamin C, potassium, and hydration, with few calories — a light, refreshing way to satisfy a sweet craving.
