Yellow Zucchini — Same Mild Flavour, Brighter on the Plate

Yellow zucchini is the same vegetable as its green cousin under a different skin colour, with a flavour so close to identical that the real reason to choose it is visual — it brightens a dish in a way green zucchini simply doesn't. Freshness is easy to judge: skin should be firm, glossy, and free of soft spots or wrinkling, since zucchini loses its crispness fast once past its best. Smaller ones tend to have fewer, more tender seeds and a milder flavour than larger, more mature zucchini, which can turn watery and develop tougher seeds inside.
