Bacon — The Lightest, Quickest-Ripening Avocado You'll Try

 

Bacon is the avocado for people who find Hass too heavy. Bred to handle cooler climates, it's one of the earliest avocados of the season, with thin, smooth, bright green skin that barely changes colour as it ripens — unlike Hass, colour tells you almost nothing here. The flesh is pale green-yellow, watery-smooth rather than dense, with a mild, faintly grassy flavour and noticeably less oil than Hass or Fuerte. That lighter texture makes it less rich for guacamole on its own, but excellent sliced into salads, sandwiches, or alongside heavier dishes where you don't want the avocado to dominate. Ripeness is judged the same way as any avocado: gentle pressure near the stem should give slightly without feeling mushy. Bacon ripens noticeably faster than Hass once picked, so check daily rather than leaving it on the counter for a week. Once ripe, refrigerate and use within 2-3 days for best texture.

  • How to tell when Bacon is ripe

    Skin colour barely changes, so don't wait for it to darken. Press gently near the stem — ripe gives slightly without feeling soft or mushy. Ripens fast: check daily once it starts to soften.

  • How to cut & use Bacon Avocado

    Halve lengthwise around the pit, twist to separate, remove the pit with a spoon. Scoop or slice directly — the fiber-light flesh holds together well for clean slices.

  • How to store Bacon Avocado

    Unripe: room temperature, out of direct sun. Ripe: refrigerate and use within 2-3 days — it softens faster than Hass. Cut half: brush with lemon juice, wrap tightly, use within a day.
