Durian — Everyone Warns You About the Smell First
Durian's reputation precedes it — banned from hotels and public transport across Southeast Asia for a smell that people either love or genuinely can't tolerate, somewhere between rich custard and something far less pleasant, depending on who you ask. It's worth pushing past the warnings, because the fruit itself has a devoted following for good reason: rich, creamy, custard-like flesh with a flavour often compared to almonds, caramel, and savoury undertones all at once, nothing else in the fruit world tastes quite like it. Ripeness is judged mostly by smell — a light, sweet fragrance coming through the spiky husk means it's ready; no smell at all usually means it isn't, while an overwhelming stench can mean it's gone too far. A gentle shake that produces a dull thud, rather than silence, is another good sign.

How to tell it's ripe
Trust your nose — a ripe durian gives off a light, sweet aroma through the husk. No smell means it's not ready; an overpowering stench means it's overripe.

How to open & use Durian
Wearing gloves helps — the spikes are sharp. Cut along the natural seams with a sturdy knife, pry it open, and pull the flesh away from each of the 4-7 seed pods.

How to store Durian
Whole, ripe: eat within 1-2 days for the best texture. Extracted flesh: airtight container in the fridge (it will scent everything nearby), use within 2-3 days, or freeze for longer.
Crack the husk open, pull out the golden flesh around each seed, and eat it fresh with your hands — no cooking needed, just a strong stomach for the smell.
Rich in fibre, vitamin C, and potassium — an unusually calorie-dense fruit, which is part of why a little goes a surprisingly long way.
