Lemons — Thin Skin, Real Weight, No Waiting
Like all citrus, lemons don't ripen any further once they're picked, so what arrives is exactly as juicy as it's ever going to get — the job is picking well, not waiting patiently. Skip the temptation to judge by colour alone; a deep yellow rind doesn't guarantee juice, and a slightly greenish patch doesn't mean it's underripe. Weight is the more reliable test: a lemon that feels heavy for its size has more juice packed inside than a light one of the same dimensions. Thin, smooth, glossy skin is another good sign, since thick or bumpy rinds tend to mean more pith and less actual juice.

How to tell it's a good one
Don't judge by colour alone. Pick it up: heavier for its size means juicier. Thin, smooth, glossy skin is a better sign than a thick or bumpy one.
-
How to cut & use Lemons
Roll firmly before cutting to release more juice. Halve and squeeze by hand, or zest the skin first for extra flavour before juicing.

How to store Lemons
Room temperature for about a week, or refrigerate for up to a month. Cut fruit: airtight container, use within 4-5 days.
Roll it firmly on the counter before squeezing to break down the internal membranes — you'll get noticeably more juice out of the same lemon.
A concentrated source of vitamin C, useful in small amounts in almost everything from dressings to tea to a simple glass of water.
