Ataulfo BIO — Mexico's "Honey Mango," Grown Organically
Ataulfo — sometimes called the honey mango — comes from Oaxaca, Mexico, and it's the mango that ruins other mangoes for a lot of people once they try it. It's small and kidney-shaped, with a flat seed that leaves an unusually high proportion of flesh to fruit. Unlike Kent, Ataulfo actually does tell you when it's ripe through colour: the skin shifts from green to a deep, egg-yolk gold, often with light wrinkling on the surface, and a gentle squeeze should give easily. Inside, the flesh is smooth, almost custard-like, with virtually no fiber and a sugar content noticeably higher than most other varieties — hence the "honey" nickname. This BIO version is grown without synthetic pesticides, so the sweetness comes purely from the variety and the ripening, nothing added. Because the flesh is so soft when ripe, it's better spooned or scooped than sliced with a knife.

How to tell when Ataulfo is ripe
Watch the colour — skin shifts from green to deep gold, sometimes with light wrinkling. Press gently; ripe gives easily under light pressure.
-
How to cut & use Ataulfo Mango BIO
Halve around the flat seed and twist apart. The soft, fiber-free flesh scoops out easily with a spoon — ideal for smoothies, purees, or eating straight up.

How to store Ataulfo Mango BIO
Unripe: room temperature, out of direct sun, 2-4 days to ripen. Ripe: refrigerate, use within 2-3 days — it's delicate once soft. Cut fruit: airtight container, same day is best.
Halve it, twist to separate, and scoop the custard-soft flesh straight out with a spoon — it's too soft to slice neatly once fully ripe.
Higher natural sugar content than most mangoes, plus vitamin C and vitamin A, grown without synthetic pesticides — a naturally sweet treat with no need for added sugar.
Foarte bun, similar cu mango kent dar mai mic si mai dulce.
Foarte aromat si dulce
