Keitt — The Mango That Stays Green When Ripe
Keitt is one of the mango varieties that genuinely misleads on colour — its skin stays mostly green even at full ripeness, with at most a faint yellow blush, so waiting for it to "turn" is a mistake that leaves you eating it too late or never at all. What tells you it's ready is touch: a ripe Keitt gives slightly to gentle pressure all over, the same way a ripe avocado does. Inside, the reward is thick, deep orange flesh that's exceptionally juicy and nearly fiber-free, wrapped around a small, flat seed that leaves more fruit to eat than most varieties. The flavour is rich and sweet without a sharp edge. Keitt is also one of the latest mangoes of the season, often available after other varieties have finished, which makes it a good pick when you're craving mango out of the usual window.

How to tell when Keitt is ripe
Keitt stays green when ripe. Completely. Don't wait for colour change — it won't come. Instead: hold the mango and press gently with your palm. A ripe Keitt gives slightly, like a just-ripe avocado. You'll also detect a faint sweet scent near the stem. Still rock-firm? Leave at room temperature 1-2 days and check daily.

How to cut Keitt mango
Stand upright, stem up. Slice down either side of the flat stone (1cm either side of centre) to get two large cheeks. Score in a 2-3cm crosshatch, push from the skin side to fan the cubes, cut free. Remaining flesh around the stone is best eaten directly — too juicy to waste.

How to store Keitt mango
Unripe: room temperature, away from direct sun — never refrigerate before ripe. Ripe: fridge, up to 4 days. To speed ripening: place in a paper bag with a banana overnight. Cut pieces: airtight container with a squeeze of lime, use within 2 days.
Over 60% of daily Vitamin C in 200g. High in beta-carotene (Vitamin A), folate, and natural digestive enzymes. BIO — no pesticide residues.
Eat cold after ripening — chill for 1 hour before eating. Score the cheeks in a crosshatch for perfect cubes. The fibre-free flesh holds shape beautifully in salads, salsas, and smoothies.
