Kent BIO is the same thick-fleshed, nearly fiberless variety mango lovers seek out, grown on farms that skip synthetic pesticides and chemical fertilisers in favour of organic methods. The skin stays mostly green even at full ripeness, sometimes with a red or purple blush, so — as with all Kent mangoes — colour isn't the ripeness clue here. What you're looking for is deep orange, exceptionally juicy flesh around a small, flat seed, with a rich sweetness and none of the stringy texture that makes some mangoes hard to eat neatly. Being a late-season variety, it's often the mango available when others have finished for the year. To check ripeness, press gently all over the fruit — it should give slightly everywhere — and trust your nose: a sweet, fruity smell at the stem end means it's ready to eat.
