Palmer — Big, Mild, and Deceptively Colourful
Palmer has one of the most dramatic looks of any mango we carry — large and elongated, often reaching close to a kilo, with skin that can flush deep red or purple well before the fruit is actually ready. That's worth repeating because it trips people up: unlike Irwin, Palmer's blush is not a reliable ripeness signal here, and fruit picked on colour alone often turns out underripe. The real test is patience and touch — leave it in the fruit bowl and check for a gentle give when you press the skin, which can take a week or more to develop. It's worth the wait: the flesh is bright orange, smooth, and nearly fiberless, with a mild, aromatic flavour often compared to a blend of peach and citrus, less intense than punchier varieties but very easy to eat. Being a late-season mango, Palmer often shows up when the more common varieties have already finished for the year.

How to tell when Palmer is ripe
Don't trust the red blush — it can appear well before the fruit is ready. Leave it at room temperature and check for a gentle give when pressed; this can take a week or more.

How to cut & use Palmer Mango
Halve lengthwise around the flat seed. The smooth, nearly fiberless flesh slices cleanly or purees easily for smoothies and sauces.

How to store Palmer Mango
Unripe: room temperature, out of direct sun — allow up to a week or more to soften. Ripe: refrigerate, use within 5-7 days; it holds up longer than most varieties. Cut fruit: airtight container, use within 2 days.
Its mild, smooth flesh is a gentle introduction to mango for picky eaters — great sliced plain, in fruit salads, or blended into a mellow smoothie.
A good source of vitamin C, vitamin A, and fibre — its large size means a single fruit goes a long way toward your daily fruit intake.
