Zill — The Mango That Turns Purple Before It Turns Ripe

Zill is a Haden seedling first grown in Lake Worth, Florida, in the 1920s, and it carries one genuinely confusing trait: as the fruit matures on the tree, its skin passes through a purple stage well before it's actually ripe — a colour shift easy to mistake for ripeness if you don't know to wait it out. The real signal comes later, when that purple gives way to a red blush laid over a golden-yellow background; pair that with a gentle give under the thumb and the pineapple-tinged aroma at the stem end, and you know it's ready. Zill fruit also grow in tight clusters and tend to ripen together within about two weeks, which is unusual among mangoes and made it a favourite with home growers long before commercial orchards took notice. Inside, the flesh is deep yellow, soft, and fiberless, wrapped around a small seed that leaves more fruit to eat than many varieties its size. The flavour sits in mango's classic sweet range, with genuine notes of peach and pineapple running through it — closer to a fruit salad in one bite than a single-note mango.
