Mini Yellow Pumpkin — Small Enough to Roast Whole, No Carving Required
A full-size pumpkin is a project; this one is a single side dish. Its compact size means it can be roasted whole — halved and seeded at most — rather than requiring the peeling and chopping a larger winter squash usually demands. The flesh is dense, sweet, and a touch nuttier than a standard pumpkin, holding its shape well when roasted rather than collapsing into mush. Because it's a winter squash, it doesn't ripen further once picked — what matters at this stage is a hard, unblemished rind and a stem that's dried and firmly attached, both signs it was harvested at the right time and will keep well.

How to tell it's good
Winter squash doesn't ripen further after picking — look for a hard rind with no soft spots, and a dried, firmly attached stem.

How to cut & use Mini Yellow Pumpkin
Halve it, scoop out the seeds and stringy centre, then roast, steam, or stuff it. The skin is thin enough to eat once cooked, if you prefer.

How to store Mini Yellow Pumpkin
Whole: cool, dry place, use within 2-4 weeks — winter squash keeps well. Cooked or cut: airtight container in the fridge, use within 3-4 days.
Halve it, scoop out the seeds, and roast with olive oil and salt until tender — a simple side dish with almost no prep.
Rich in vitamin A, potassium, and fibre — a naturally sweet way to add a genuine vegetable to the plate without much effort.
