Rambutan — No Waiting Required

Rambutan looks intimidating with its soft, hair-like spines, but the fruit inside couldn't be more approachable. Related to lychee, it's harvested only once fully ripe on the tree — unlike mango or avocado, it doesn't continue ripening once picked, so what arrives is what you get, and it's ready to eat right away. The colour of the spines and skin tells the story: green when young, shifting through yellow and orange to red as it ripens, with the spines themselves staying soft and flexible throughout. Inside, the translucent white flesh is sweet with a distinct tartness and a faintly floral note, similar to lychee but with more bite. The seed at the centre is not eaten — it's mildly toxic raw and should always be discarded. Depending on the variety, the seed either slides out easily (freestone) or clings to the flesh a bit more (clingstone); either way works fine, just expect a little more effort with the second type.

  • How to tell it's ready to eat

Rambutan doesn't ripen after picking, so what you receive is ready now. Look for red or orange-red skin with soft, flexible spines — avoid any gone black or fermented-smelling

  • How to cut & use Rambutan

Use a knife to slit around the middle of the skin, then twist or squeeze to pop the flesh free. Discard the skin and the inedible seed at the centre.

  • How to store Rambutan

Refrigerate as soon as it arrives, use within 5-7 days — the spines dry out over time even if the flesh is still fine. Peeled fruit: airtight container, use within 1-2 days.

Slit the skin around the middle and squeeze — the flesh pops right out. Eat it fresh, or add to fruit salads, sorbets, and curries for a sweet-tart lift.
