Rosa — The Tomato Spain Calls "Beautifully Ugly"
Rosa tomatoes won't win any beauty contests by conventional standards — irregular, sometimes scarred, with none of the smooth uniformity of a supermarket tomato. That's exactly the point. This heirloom variety from Barbastro, in Aragón, is grown for what's inside rather than how it photographs: large, pink-toned fruit (rosier than red, hence the name) with thin skin, dense and meaty flesh, and a compact texture that comes from unusually low water content for its size. The flavour is sweet and balanced with remarkably little acidity, which is why it's the tomato Spanish cooks reach for in gazpacho and salmorejo — nothing sharp to fight against the other ingredients. Minimal seeds mean clean slices, and the low water content means it holds up well raw, without turning watery on the plate.

How to tell it's a good one
Don't judge by shape — irregular, slightly scarred skin is completely normal for this variety. Look for a rosy-pink colour and a firm feel; it should not be soft or wrinkled.
-
How to cut & use Rosa Tomatoes
Slice thick for salads or sandwiches, or use raw in gazpacho and salmorejo, where its low acidity and meaty texture really come through.

How to store Rosa Tomatoes
Room temperature, out of direct sun, for the best flavour — refrigeration dulls the taste. Use within 4-5 days for peak texture.
Slice thick, dress with just olive oil and sea salt — the low acidity and dense texture mean it needs almost nothing added to shine.
Rich in lycopene, vitamin C, and potassium, grown without synthetic pesticides — a classic tomato benefit profile in an especially low-acid, easy-to-digest package.
